New beginnings!

Hi Everyone! I decided I'm going to try to post on my blog more often. I'm wanting to post about clean-eating, exercise, mommy issues, beauty products, and more. Feel free to follow and start discussions! Today I want to share the Multi-Grain Overnight Cereal from Oxygen Magazine. I make it Sunday so JD and I can have it for breakfast Monday and Tuesday. It makes 4 servings so I give myself 2 and JD 2 servings. I love this cereal!

1/3 cup steel-cut oats
1/3 cup quinoa
1/3 cup millet
1 Tsp cinnamon
pinch of salt
1/2 cup low-fat milk
1 apple, grated
1/4 cup ground flaxseed or chia seeds
2 Tbsp pure maple syrup or honey
1/3 cup chopped almonds
1/4 cup unsweetened coconut flakes

1. In a medium saucepan, bring oats, quinoa, millet, cinnamon, salt and 3 cups of water to a boil. Immediately remove from heat, cover and let sit overnight.

2. In the morning, stir in milk, apple, flaxseeds, and maple syrup or honey. Heat over medium-low until warmed through. Serve topped with almonds and coconut.

I make my own changes to almost every recipe/meal I make to customize to my wants. Changes I made to this recipe:

1/2 cup regular Oats
1/2 cup quinoa
1/3 cup fat free milk
1/2 apple
spoonful flaxseed
a swirl of honey
no almonds
pinch of Sweetened coconut flakes
(everything else is the same)
